When white light travels from one medium to another (air to water), the light waves bend and it is slowed down. As the waves slow down the light is split into different colours.

This is why we can see rainbows on a sunny day when it is raining.

As the light travels through the raindrops it is slowed down enough for us to see the different colours.

Although we can only see 7 colours white light is actually a continuous spectrum of a whole range of colours.
